Vegetarian and Vegan Recipes
Eating vegetarian food is more sustainable and environmentally friendly for our planet1. To produce 1 kg of meat takes much more energy than to produce 1 kg of vegetables. More land is needed to support an animal and their food than growing fruit and vegetables. Also, animals release a lot of methane gas2 which is actually more harmful to the environment than CO2.
Secondly, it is healthy and you don’t need to think of vegetables as just a side dish to your meat, as everything you need is already in vegetables! For instance, a courgette and potato casserole has all the carbs and nutritional values you need from a meal in a simple 20 minute dish.
If you can reduce the amount of meat in your diet by a couple of dishes a week, the cows and chickens will be grateful, you will be helping the environment and it is cheaper than a 100% meat diet.
I like easy recipes that make tasty food, and that’s the kind of recipes I will post here. If you enjoy cooking it gives you a whole new playground to try out new recipes. I hope I can inspire you to eat more vegetarian meals, and if you like them, please share the recipes with other non-PEAT-members as well.
